2 eggs
1 1/2 cup sugar
2 1/2 tsp baking soda
1 pint buttermilk
1/2 cup shortening
2 1/2 cups flour
In a medium bowl pour 1 cup boiling water over:
1 cup Nabisco 100% Bran*
1/2 cup Kellogg All Bran
Let Cool.
In a small bown add the 2 eggs one at a time, beating after each one. In a large bowl, cream sugar and shortening. Add eggs, bran mixture, flour, baking soda and buttermilk. Mix well. Spoon evenly into muffing cups. Bake 15-20 minutes at 350 degrees.
The batter can remain in the fridge for over a week. Add raisins, nuts or dates just before baking into each muffin. Do not add to stored batter.
*I haven't been able to find this lately so I've been using Bob's Red Mill Wheat Bran. You can find the 10 oz. bag in the cereal section.
